VENTILATION and EXTRACTING SYSTEMS
A fire occurs every 6 hours because canopies, filters and ducting systems become built up with deposits of grease, particularly in areas adjacent to deep fat fryers. Beside a fire risk these deposits can lead to humidity, high temperatures, condensation and food contamination. These conditions also provide an ideal living & breeding environment for cockroaches due to the warmth & absence of light.
The cleaning of ventilation & extracting systems is not something you can safely leave to your own staff. Sometimes access panels must be installed in order to clean inaccessible areas. Filters should be chemically soaked then degreased using high pressure steam. Canopies, whatever their fabric e.g. fibre glass, galvanised or stainless steel, should be cleaned internally & externally, including light fittings, pipe work, drip trays & housings. This service on a planned maintenance will reduce the risk of fire & lead to a better working environment for your own staff.
